Highland Park – 12 Year Old (70cl)

Highland Park 12 Year Old is a malt whisky from Scotland's northernmost distillery, and the entry point to its range. The malt is turned by hand, a method now kept up by only four distilleries, and peat is burned in the kiln under the distinctive pagoda roof, giving a sweet, heather-like aroma. Maturation is in sherry-seasoned oak: Spanish casks bring colour and dried fruit, while American oak adds vanilla and milk caramel. The nose is clean, with jasmine, freshly cut hay, toast, a little honey and cream. The palate is light, with green tea, candied orange peel and toasted seeds, leading to a peppery, spicy finish.
