Highland Park 17 Year Old The Light is a single malt from the Highland Park distillery on Orkney, an archipelago of some 70 islands. The distillery cuts its own peat from its grounds, which lends the whisky its soft smoke and honeyed sweetness.
The whisky matured for 17 years in refill American oak casks, which have a gentler influence than first-fill European oak.
On the palate it balances caramelised pear, nutmeg, vanilla, cedarwood and lightly smoked peat.
