Highland Park 12 Year Old is a single malt from Orkney, matured for at least 12 years in Spanish sherry oak casks. The barley is malted slowly on a stone floor and turned by hand, then dried over peat cut by hand at Hobbister Moor.
The sherry oak adds a honeyed sweetness that sits alongside gentle peat smoke. The colour is pale gold with an orange tinge.
The nose offers pear, apple and melon with honey, vanilla and cinnamon, plus heather and a touch of iodine. The palate is medium in weight and slightly oily, with heather, cut grass, nuts and sweet toasted cereal. The finish carries a light, peaty smoke.
