Highland Park – 16 Year Old Wings of the Eagle (70cl)

Highland Park Wings of the Eagle is a 16-year-old single malt from Orkney, in a 70cl bottle. It is matured in American and European oak casks that held sherry. The name draws on Viking legend, in which the eagle at the top of the sacred tree Yggdrasil stands for wisdom and knowledge. Its wingbeats make the winds that sweep the earth, and on Orkney they can pass 100 miles an hour in winter. The treeless moorland peat is rich in fragrant heather, which gives Highland Park its aromatic smoke. The nose is woody and citrus, with smoke. The palate is soft and smoky, with vanilla and nuts such as walnut, and a peppery, elegant character.
