Highland Park 21 Year Old is a 2020 release from Orkney, bottled at 46% in a 70cl bottle without chill filtration. It was matured for 21 years in first-fill sherry-seasoned European oak and refill American oak casks.
The malt is made with hand-turned floor maltings and dried over peat smoke from Hobbister Moor, using only Orcadian peat.
The nose has heather honey, peat smoke, warm spice, candied orange peel and marzipan. The palate is honeyed, with cinnamon, nutmeg, dark chocolate, dried fruit and a wisp of peat. The finish is long, with sweet spice, vanilla, gentle smoke and a little sea salt.
