Highland Park 21 Year Old is an Orkney single malt released in 2023 and bottled at 46% in a 70cl bottle.
It matured for 21 years in a combination of European oak sherry casks, American oak bourbon barrels and Spanish Rioja wine casks. The distillery uses peated malt and local peat that contains heather.
The nose brings heather honey, peat smoke, red berries, dark chocolate and dried orange peel. The palate is full and velvety, with honey, vanilla, warming spice, dried fruit and toasted oak, and cinnamon and dried cherry developing. The finish is long and warming, with sweet smoke, dried fruit and gentle spice.
