Highland Park 30 Year Old is a single malt from Orkney, released in spring 2019 and bottled at 45.2% in a 70cl bottle.
It matured for at least thirty years in European and American oak casks that had previously been seasoned with dry Oloroso sherry from Jerez. The distillery uses traditional floor malting and peat from Hobbister Moor, which contains heather.
The nose combines aromatic honey, dark chocolate, dried orange peel and warm spices, with a trace of peat smoke and sea salt. On the palate, honeyed malt, cinnamon, nutmeg, dried fruit and heather sit alongside peat smoke. The finish is very long, with sweet spice, oak and dried fruit.
