Highland Park – Triskelion Bourbon & Sherry Matured (70cl)

A Highland single malt from Highland Park, created by three of its Whisky Makers: Gordon Motion, Max McFarlane and John Ramsay. They set out to explore how wood and cask seasoning shape the whisky. Three principal cask types were chosen and combined: first-fill sherry-seasoned Spanish oak butts, first-fill sherry-seasoned American oak casks, and ex-bourbon barrels and hogsheads. A small number of refill casks were added for softness. A light peat smoke runs through it. The nose offers smoked heather, lemon and orange pith with a hint of peach. Orange marmalade, honeyed toast, floral peat smoke and dried fruit lead the palate, and the finish is dried apricot and flamed orange peel.
