This is a peated Highland single malt from Thompson Bros., distilled at Dornoch Distillery and matured for 18 years in Oloroso sherry hogsheads. It is bottled at 45.7% in a 70cl bottle, in natural colour and without chill-filtration.
Thompson Bros. was founded in Dornoch in 2017 by the brothers Simon and Philip Thompson.
The nose opens with sage and rosemary and floral heather smoke, moving to tar, oily saltiness and crushed shell minerality. On the palate a strong rush of peat comes first, then sharp, slightly bitter orange, sour apple and heather honey, with an oily texture and salty rockpool character. The medium finish carries brine, lasting earthy peat and cigar smoke.
