This is a Kentucky straight bourbon from Hirsch, bottled at 100 proof (50% ABV) in a 75cl bottle. The Bivouac is a batched bourbon, with each batch said to be composed of around 160 barrels. The name refers to a temporary shelter used by outdoor travellers.
It combines two Kentucky bourbons from different mashbills. Ninety per cent is 4 years 8 months old, made from 74% corn, 18% rye and 8% malted barley. The other ten per cent is 6 years old, made from 72% corn, 13% rye and 15% malted barley.
The nose is bright, with hay, oak, light vanilla, grain, a hint of fresh peach and faint baking chocolate.
