Holyrood Distillery – Noir Collection Burgundy Single Malt Scotch Whisky

This is a single malt Scotch whisky from Holyrood Distillery in Edinburgh, released as the Burgundy bottling in its Noir Collection. Holyrood is the first operating whisky distillery in central Edinburgh since 1925. It occupies a former railway shed from 1831 on the edge of Holyrood Park. Canadian founder Rob Carpenter, with his wife Kelly and co-founder David Robertson, opened it in 2019. The distillery sets out to show there is another way to make single malt, working with heritage malts, specialty malts and different yeasts.
