The Noir Trilogie Premier Cru Yeast is a single malt whisky from Holyrood Distillery in Edinburgh, bottled at 47.2% abv in a 70cl bottle. It is made with Pinnacle M and Maurivin yeasts, French wine yeasts working with Scottish malt, and matured in ex-bourbon and ex-Chardonnay casks and ex-bourbon and ex-white wine casks. It is natural in colour and non-chill filtered.
On the nose there are buttercups, pears, apples and white chocolate. The palate brings salted caramel, pastry, toffee apple and pie crust, leading to a silky, smooth, lingering and dry finish.
