The Noir Trilogie Bordeaux Yeast is a single malt from Holyrood Distillery in Edinburgh, bottled at 47.1%, non-chill filtered and of natural colour. It belongs to a series that pairs French wine yeast with Scottish malt, and here the yeasts are Pinnacle M and BP725.
The whisky was matured in ex-bourbon casks and Bordeaux barriques.
The nose offers strawberries, blackcurrant, cherries, fruit slice and cheesecake. The palate turns to Scottish tablet, fudge, doughnuts and breakfast cereal. The finish is silky, warm, lingering and dry.
