The Noir Trilogie Burgundy Yeast is a single malt from Holyrood Distillery in Edinburgh, bottled at 47.4%, non-chill filtered and of natural colour. It is part of a series that pairs French wine yeast with Scottish malt, and here the yeasts are Pinnacle M and Maurivin B.
The whisky was matured in ex-bourbon casks and Burgundy barriques.
On the nose are pomegranate, candy floss and blackcurrants. The palate brings raspberry jam on toast, brandy snap basket, cranachan, vanilla and malted biscuits. The finish lingers, starting sweet and ending malty.
