This is a Texas rye whisky bottled at 45% in a 70cl bottle. The mash is 81% non-GMO Texas rye, 14% corn and 5% malted barley, fermented for three to five days with a yeast taken from organically grown pecans, then distilled twice in a column still.
It spends at least three years in freshly charred 200-litre barrels of American white oak, and is reduced to strength with natural Black Forest spring water. It is chill-filtered and has no added colour.
The nose shows black pepper and cinnamon, caramel, vanilla, toasted pecans and a little leather, with candied orange and dried apricot later. On the palate come rye spice, clove, nutmeg, maple syrup, toasted oak, tobacco and dark chocolate, in a creamy, buttery texture. The finish is long and warming, ending on caramel and roasted nuts.
