Illicit Gin New Tom (70cl, 40%)

Illicit New Tom is a Scottish gin in the Old Tom style, bottled at 40% abv in a 70cl bottle. Old Tom is a sweeter style of gin, closer to the original Dutch genever than to London dry. Pink pepper, tonka beans, rosehips and nasturtium flowers are added, and after distillation the gin is sweetened with Scottish blossom honey and bee pollen. It is made in small batches on a 150-litre direct-fired copper pot still in a railway arch in the Tradeston area of Glasgow, by the Illicit Spirits Distillery, founded in 2017 by distiller Darran Edmond. The gin is sweet and smooth, with floral and citrus notes.
