The Chinkapin is the third core bottling from Isle of Raasay Distillery. It matured entirely in fresh and refill Chinkapin oak casks, not as a finish, and the distillery believes it is the first single malt Scotch fully matured in this wood. The casks are heavily toasted and charred, which brings barbecue and roasted notes.
Peated and unpeated spirit from Scottish barley matured separately before being married. The spirit was distilled between 26 April 2021 and 10 November 2022, and the whisky was bottled on Raasay in February 2026 at 50.2%. About 10,000 bottles were filled, with natural colour and no chill-filtration.
The nose is warm wood smoke, juicy dark fruit and sweet spice. The palate brings barbecue, smoked ham, maple syrup, honey, lime and cinnamon. The finish is long, with sandalwood, sweet spice and fragrant smoke.
