Kaiyo 'The Rubi' is a Japanese malt whisky and the latest in Kaiyo's special release cask finish series, bottled at 46% ABV in a 750ml bottle. It is not chill-filtered.
It spends three years in Japanese Mizunara oak, then goes to sea for three months, as all Kaiyo whiskies do. Back in Japan it matures for a further seven years before a short four-month rest in former Ruby port pipes.
