Kaiyo The Rye is a 10 year old whisky from the Wood Library Series, made from 100% malted barley and bottled at 46% ABV. It spent five years in new mizunara oak casks in a Japanese warehouse, then three months at sea from Osaka to the UK, where it carried on maturing in the same casks. A further five years followed in Knob Creek rye barrels.
On the nose there is gingerbread, bananas Foster, caramel, red berries and milk chocolate, with a scattering of rye spices. The palate offers caramel, malt, mint and dill, moving on to whole-grain crackers, peppercorn, chocolate and toffee.
