Keeper's Heart Irish + Bourbon Cask Strength is a blended whiskey from O'Shaughnessy Distilling Co., bottled at 59% ABV in a 700ml bottle. It combines Irish pot still whiskey, Irish grain whiskey and American bourbon, in proportions of 41% Irish whiskey to 59% bourbon.
The Irish pot still component is triple distilled from malted and unmalted barley and aged in refill American bourbon barrels. The bourbon portion has a mashbill of 75% corn, 21% rye and 4% malted barley. It is bottled without chill filtration.
Vanilla, coconut, caramel and red apple lead the nose. The palate moves from honey and baked apple to orange, grapefruit and black pepper, and the finish is long, with peppery oak and herbal earthiness.
