Keo St John Commandaria is a fortified dessert wine from Cyprus, made in the Commandaria appellation by KEO Ltd of Limassol. It comes from overripe Xynisteri and Mavro grapes, hand-harvested on the eastern slopes of the Troodos mountains.
The grapes are dried in the sun on straw mats for about ten days to concentrate their sugars. After pressing and fermentation the wine is fortified with neutral grape spirit and aged in used oak barrels for at least two years. A solera system blends younger wines with older reserves to keep the house style consistent.
The nose shows walnut, fudge, cocoa and baking spices. On the palate come caramelised apple, toffee, coffee, date, plum and raisin, with a long, warming finish of walnut and dried fruit.
