Kilchoman Cognac Cask Matured is a limited edition Islay single malt, bottled at 50% abv. It is heavily peated, at 50 PPM, and the release runs to 15,100 bottles.
The whisky was matured in a combination of 32 Cognac casks from the cooperage Tonnellerie Bossuet, selected for a maturation of at least six years.
Tasting notes describe a nose that opens with ripe apple and pear, followed by spicy and fruity tones, delicate peat and honey. The palate is buttery from the Cognac influence, with dried lemon and apricot, cinnamon, nutmeg, toasted oak and sweet peat smoke. The finish is long, with dried fruit, marzipan, ginger, peat smoke and citrus oil.
