Kilchoman – Fino Sherry Cask Matured 2023

This is an Islay single malt from Kilchoman, matured in Fino sherry butts. Anthony Wills and Robin Bignal selected 20 of them, filled with spirit distilled in 2018. The casks came from Bodega Jose Miguel Martin. Fino gives Kilchoman a style of maturation rarely seen at the distillery. The casks developed a dry saltiness, balanced by green fruit and Islay peat. The nose is elegant, dry smoke with dry wood, butterscotch and green apple. The palate offers honeycomb, toffee, caramel, candied fruit, fresh citrus and almonds over gentle peat smoke. The finish is long, with malt, candied citrus, light peat and dark chocolate.
