This is a single cask Islay single malt from Kilchoman, the 4th Edition of its Founders Cask series. It was distilled in 2011 and bottled in 2021 after 10 years in oloroso sherry hogsheads. It is bottled at a natural cask strength of 54.4% in a 70cl bottle, non-chill-filtered and at natural colour.
Peat smoke and sherry maturation run together here.
The nose has raisins, fig syrup, Christmas cake and baking spices, with cocoa and smouldering peat. The palate brings stewed plums, spiced fruit loaf and treacle, with citrus and earthy peat smoke. The finish is long and warming, with sweet malt, salted caramel, sea salt and gentle peat smoke.
