Kilchoman Genesis Stage 3 – Peating

This is a Kilchoman single malt from Islay, the third release in the distillery's from barley to bottle series. It covers days 13 and 14 of the process, when the malt is dried over a peat fire. The malt combines 30% barley grown on the farm, peated to 20 ppm, with 70% barley from the Port Ellen Maltings at 50 ppm. Maturation took place in 70% ex-bourbon casks, 25% STR wine casks and 5% ex-sherry casks. Just 3,600 bottles were filled. The nose is richly smoky, with Kilchoman's citrus, malty sweetness and soft vanilla. The palate is creamy, with fresh herbs, a touch of liquorice and chewy caramel. The long finish is fruity, with smoked ham and bacon.
