Kilchoman Genesis Stage 4 – Mashing is a single malt from Islay, the fourth release in the distillery's From Barley to Bottle series. It follows the Harvest, Malting and Peating bottlings and is devoted to day 28, the mashing of the milled malt. Only 3,000 bottles were filled.
The malt combines home-grown barley at 20 ppm with barley from the Port Ellen Maltings at 50 ppm. The whisky matured in 75% bourbon, 20% Cognac and 5% Oloroso sherry casks.
The nose has gentle peat smoke, fresh fruit and sweetness. On the palate come tropical and dried fruit, then caramel and a hint of spice. The finish is long, balancing light smoke with sweet fruit.
