Kilchoman PX Sherry Cask is the 2023 release, the first PX edition matured entirely in Pedro Ximenez sherry casks. The whisky spent at least five years in hogsheads previously used by the Bodega José y Miguel Martin in Jerez, Spain. It is bottled at 50% in a 70cl bottle.
Sixty-one casks went into this release, which produced 23,000 bottles. The peat smoke measures 50 PPM, set against a rich, sweet sherry character with citrus sweetness and a little sea salt.
The nose is sweet with raisins, peat smoke and a touch of citrus. The palate brings brown sugar, malt, orange peel and dark chocolate, and the finish has chocolate-covered raisins, oak smoke and spice.
