Kilchoman – PX Sherry Cask Matured 2023 (70cl, 50%)

Kilchoman PX Sherry Cask Matured 2023 is an Islay single malt and the distillery's first limited edition matured entirely in Pedro Ximénez sherry casks. It spent a minimum of five years in hogsheads that previously held sherry at Bodega José y Miguel Martin in Jerez, Spain. It is bottled at 50% ABV in a 70cl bottle. Founder Anthony Wills explains that the rich, sweet PX character calls for a shorter maturation to keep the flavour balanced against the citrus sweetness and peat smoke of the spirit. The nose has sweet sultanas and raisins, rounded peat smoke and liquorice. The palate brings brown sugar, orange peel and dark chocolate, and the finish has chocolate-coated raisins, oak smoke and lasting PX sweetness.
