Kilchoman Sauternes Cask Matured is a 2024 edition single malt from Islay's farm distillery, in a 75cl bottle. The whisky spent its whole maturation in ex-Sauternes wine casks, a mix of fresh and refill barriques from two different years, the youngest from 2018.
Kilchoman was founded in 2005 and was the first distillery built on Islay for over 120 years. It grows and malts a proportion of its own barley on the farm.
Citrus and peat smoke run through it, with layers of peaches, honey and white grape sweetness.
