Kilchoman – Sauternes Cask Matured (2024) (70cl, 50%)

This is a 2024 limited edition from Kilchoman on Islay, matured entirely in ex-Sauternes wine casks. It is bottled at 50% in a 70cl bottle, non-chill-filtered and of natural colour. The French dessert wine casks bring a honeyed sweetness alongside the distillery's peat smoke, which sits at approximately 50 ppm. The nose shows honey, apricot, vanilla, ripe peach, sweet smoke and light spices. On the palate, creamy sweetness meets peat smoke, caramel, yellow fruit, burnt sugar and subtle citrus. The finish is long, smooth and warm, with honey, smoke, fruit and oak leaving an elegant sweetness.
