Kilchoman Sauternes Cask Matured is a limited edition Islay single malt bottled at 50%, matured only in ex-Sauternes casks. Anthony Wills, who founded Kilchoman, used a mix of fresh and refilled Sauternes barriques from 2017 and 2018. Kilchoman is a farm distillery on Rockside Farm in north-west Islay, founded in 2005. The flavours combine buttery sweetness, grilled pineapple, candied ginger, flowers and peat smoke.
