Kilchoman – Single Cask 42/2007 Bourbon Cask

A single cask Islay single malt from Kilchoman, drawn from cask 42/2007, a first-fill bourbon cask in which the whisky matured throughout. Kilchoman was founded in 2005 and was the first new distillery on Islay in more than 124 years. The nose has roasted vanilla, crème brûlée and light honey alongside peat smoke, with lemon, lime, white pepper and roasted almonds. The palate starts with firm smoke, vanilla and caramel, then ripe banana, coconut, clove and a little sea salt. The finish is long and warming, with peat and smoke, soft vanilla sweetness, citrus, light pepper and oak.
