La Adelita Black Añejo Cristalino Tequila (75cl, 40%)

This is a cristalino tequila from La Adelita, made from single barrels of añejo. The tequila spends 18 months in second-use American oak whiskey barrels, which are re-toasted in Mexico to a medium toast. After ageing it is filtered through a proprietary process that removes the colour while keeping the flavour. It is crystal clear in the glass, with pronounced legs, and bottled at 40% vol. The nose is salty and pulpy, with cashew, anise and oak. The palate starts sweet, with white pepper and nectarine zest, then moves to semi-sweet peach nectar. The finish is velvety.
