Lark – Christmas Cask No.125 2026 Limited Edition Single Malt (70cl, 43%)

This is a Tasmanian single malt from Lark, the eighth annual release in its Christmas Cask series. It is a collaboration between Lark, the Frogmore Creek winery and the Hobart patisserie Jean-Pascal. The whisky is matured in Port and Sherry casks, then finished in Frogmore Creek red wine barrels that have been seasoned with Jean-Pascal's fruit mince pie jus. The idea began as a way to give surplus mince pie ingredients a second use. The nose brings plum pudding, brandy butter, mulled-wine spices and gingerbread. On the palate come coconut shortbread, baked custard, spiced apple and caramel sauce, followed by a long finish of candied walnut and orange cream.
