Lark – Classic Cask Tasmanian Single Malt Whisky (50cl, 43%)

Lark Classic Cask is a Tasmanian single malt from Lark Distillery, founded by Bill Lark. This 50cl bottle is bottled at 43% ABV. It is made from Tasmanian Franklin barley malted at the Cascade Brewery, with about half the malt peated, so it is lightly peated. The spirit is double distilled in locally made copper pot stills. Maturation takes place in small 100 litre oak casks for five to eight years. Their larger surface area relative to the liquid means a faster rate of evaporation than in the bigger casks common in Scotland.
