Ruby Abyss No. 285 is a Tasmanian single malt from Lark, placed at the top of the distillery's Signature range. It was matured entirely in first-fill Seppeltsfield Port and Sherry casks, including parcels drawn from Australian Port reserves that are 100 years old.
The nose is of dark fruits, stewed plums and raisins, with caramelised brown sugar and toasted nuts. The palate is full-bodied and velvety, with plum compote, blackberry, chocolate and mocha, buttery pastry and a thread of Tasmanian peat smoke. The finish is long and warming, with spiced treacle, candied quince and fortified oak.
