Lindores Abbey – Casks of Lindores Bourbon II 2023 (49.4%)

A 2023 release from Lindores Abbey in Scotland, part of the Casks of Lindores series. It was matured only in ex-bourbon casks and bottled at 49.4%, a higher strength than the distillery's core range. The distillery opened in 2017 and works with local barley, long fermentations of 119 hours and slow distillation runs. This bottling is a limited edition of young spirit. The colour is bright gold. The nose is mild and vanilla-led, fruity and buttery, with a hint of citrus and peppery wood. On the palate vanilla meets orchard fruit such as green cooking apples, topped with peppercorns that leave a hot, lingering feel into a long finish.
