Lindores Abbey Friar John Cor Chapter 2 is a Lowland single malt from the Lindores Abbey Distillery in Fife. Released in 2023, it is the second chapter of the Cask Strength Congregation series and honours Friar John Cor, the monk linked with the earliest surviving written reference to Scotch whisky production, in 1494.
It was matured in bourbon casks, shaved, toasted and re-charred wine barriques, and rum and peat-influenced casks. It is bottled at a cask strength of 60.9% ABV, without chill filtration or added colouring.
The nose has maple syrup, roasted banana, dates, apples and cinnamon, with gentle earthy peat smoke. The palate brings pears, banana, toasted almonds, caramel, sweet malt and brown sugar.
