Lindores Abbey – New Make Spirit (20cl, 63.5%)

This is the unaged new make spirit from Lindores Abbey Distillery in Newburgh, Fife. It was distilled in 2023 and bottled the same year at 63.5% in a 20cl bottle, with no cask maturation. It is unpeated, not chill-filtered and has no added colour. To bring out tropical fruit, the distillery lengthened fermentation to 114 hours and ran the spirit stills slowly, with the cut starting at 75-76% and ending at 66%. The nose combines vanilla, cereal, mint and stewed pear. The palate is silky and mild, with hazelnut and toffee sweetening background notes of fruit and spice. The finish is full and warming, with several fruit impressions playing together.
