Lindores – Single Malt Sherry Cask

This is a single malt Scotch whisky from Lindores, matured in sherry casks. The distillery stands on the site recognised as the first recorded distillation of Scotch whisky, in the Exchequer Roll of 1494, when the monk John Cor was commissioned to turn eight bolls of malt into aqua vitae. Building work on the new distillery began in 2016, with the first distillation in 2017 and the first whisky released in 2021. A wash fermentation of 117 hours is among the longest in Scotch whisky. On the palate it is sherry-soaked fruit cake with warm baking spices, creamy vanilla and a dusting of dark chocolate, finishing on lingering spices and dried prunes.
