Michel Couvreur The Unique Whisky (70cl, 44%)

The Unique Whisky from Michel Couvreur is a blend of malted and unmalted cereal whiskies, distilled partly in a pot still and partly in a Coffey still in Scotland. It spent four years in oak, partly in Scotland and partly in France. It was reduced to 44% with water from the Pentland Hills and bottled without filtration, in a 70cl bottle. The colour is opalescent. The nose is lightly iodine with a hint of almond, vanilla and floral notes. The palate is lively and round. It is best served chilled, as an aperitif.
