Mijenta Añejo Symphony Series No. 3 is a highland tequila from Los Altos, Jalisco, made from blue agave and bottled at 45%. It is aged for 18 months in barrels built from American oak staves taken from four forest regions: Minnesota, Missouri, Pennsylvania and Virginia.
The agave is slow-roasted in brick ovens and distilled in copper pot stills. Each stave is toasted over a low-burning chaufferette while being misted with water.
The nose shows roasted agave, semi-sweet chocolate, dulce de leche, caramel and rose petals. The palate is silky, with cooked agave, vanilla, chocolate, orange peel and gentle spice. The finish is medium, moving from vanilla-caramel to agave over oak tannins, with burnt orange.
