Mod Sélection Rosé Champagne (75cl, 12%)

This is a Brut rosé Champagne made by the saignée method, in which the colour is drawn from the skins as the juice bleeds off. The grapes go through a cold soak maceration at harvest, a step that keeps the wine fresh and lively. The result is a pale salmon colour with a rich, inviting bouquet. On the palate there is fresh red fruit and a very fine mousse, leading to a long, succulent finish.
