Nc'nean – Quiet Rebels: Matthew

This is Quiet Rebels: Matthew, a limited edition single malt from Nc'nean, the distillery on Scotland's west coast that works with 100% Scottish organic barley and a net-zero approach. The vatting is 47% Manzanilla, 51% Bourbon and 2% Oloroso sherry casks, chosen by Matthew. The Manzanilla hogsheads were seasoned in Jerez for 24 months beforehand and give the whisky its light saltiness. The nose brings warm pineapple cake, vanilla and sweet-salty popcorn, with roasted hazelnut. On the palate are ripe pineapple, buttery caramel and a little salt, with citrus and toasty notes. The finish is long and dry, with dried hazelnuts and a touch of tannin.
