Nikka Yoichi Aromatic Yeast 2022 Edition (47%)

This is Yoichi Aromatic Yeast, a 2022 edition from Nikka bottled at 47%. It follows the Yoichi Single Malt Non-peated launched in 2021, and puts the focus on yeast. Low-temperature fermentation gives a character that recalls the fruity, floral world of sake. The whisky also returns to Yoichi's typical style, with a peat that shifts in mood and shows most clearly on the first nose and in the middle of the palate. Fruit and floral notes run through the aromas and flavours, layered and complex.
