Nikka Yoichi Aromatic Yeast is a Japanese single malt bottled at 48%. It is a limited Discovery edition from the Yoichi distillery, released in 2022 and built around the theme of yeast. It comes from a low-temperature fermentation, which brings to mind the floral, fruity character of Ginjo-style sake. It also returns to the typical Yoichi style, with a peat that shows several sides. The peat is most present on the first nose and in the middle of the palate, running through a range of fruity and floral notes.
