Noah's Mill is a Kentucky straight bourbon made by Kentucky Bourbon Distillers in a pre-Prohibition style, which the company has followed since the 1990s. It is matured in new charred American white oak casks and bottled by hand in small batches at 57.15%.
Vanilla, chocolate, oak, cherry and marzipan show on the nose. The palate adds coffee and apricot to the vanilla, oak and chocolate, with a bourbon sweetness and mineral undertones. The finish is long, intense and elegant, with fine oak.
