Noah's Mill is a small batch Kentucky straight bourbon from the family-owned Willett Distillery in Bardstown. It is bottled by hand in a 750ml bottle at barrel strength, 114.3 proof (57.15%), without chill filtration.
The mashbill is 72 percent corn, 13 percent rye and 15 percent malted barley, and the whiskey is matured in new, heavily charred American oak. It carries no age statement. The current blend is built mainly from Willett's own whiskey aged around six to seven years.
The nose is distinctly nutty, with roasted walnuts and peanut, seasoned oak and dark caramel.
