Noilly Prat Dry is a French dry vermouth, made in Marseillan in southern France and bottled at 18% in a 75cl bottle. The base wine is a blend of 60% Picpoul de Pinet and 40% Clairette.
Barrels of wine are aged outdoors in an open courtyard for up to a year, a process called L'Enclos. Botanicals are then introduced by hand-stirring, known as dodinage, over three weeks in oak casks.
The nose is floral, with chamomile, apple blossom and bergamot over juniper, thyme and a hint of sea salt. The palate is clean and dry, with citrus, pine, white stone fruit and restrained wormwood bitterness. The finish is long, with anise, fennel, angelica and a slightly bitter edge.
