Noilly Prat Rouge Vermouth

Noilly Prat Rouge is a French vermouth made in the port of Marseillan on the Mediterranean coast, where the house has worked since 1813. It is built on white wines, half of them aged for three months in oak casks in the Chai St Louis for structure, the rest rested in large vats to keep them fresher and lighter. The wine is then infused with a blend of 29 herbs and spices from around the world. For one hour each day over three weeks, the wine is circulated through them, slowly taking up their bittersweet and spicy character.
